Casera del Raschera d'Alpeggio
The
Casera del Raschera d'Alpeggio is found at 1000
metres a.s.l. in Frabosa Soprana near Mondově, an area renowned for its production
of mountain cheeses. Under the co-ordination
of Beppino Occelli, the alpine herdsmen bring, together with the
milk from their herds, the time-honoured know-how handed
down from generation to generation. This is the only place where
real Raschera di Alpeggio is produced.
The milk is collected from the cowherds that graze
above 900
metres and the maturation
process observes the age-old traditions that survive in the
collective memory. Quality Raschera di
Alpeggio, while offering interesting prospects on
the market, also defends traditional values and ensures
the continuing existence of the mountain territory and its cultural
values. Beppino Occelli, who loves this place and its people who
live there so harmoniously, tending their herds of cows, sheep and goats,
has looked beyond the magic of Raschera di Alpeggio and has rediscovered and re-evaluated the production
of the blue-veined cheeses which are a tasty expression of alpine
cheese making. There is an extraordinary range of these marbled
cheeses that, like Raschera di Alpeggio,
are produced from fresh cows, sheep or goats'milk
