Aged cheeses

In the village of Valcasotto, Beppino Occelli collects and ages his best cheeses produced in the Langa or selected from the alpine meadows around Cuneo. In the ancient cellars the air, the pure water, the controlled humidity and the passage of time work in unison alongside the affineurs to form the identity and personality of the different cheeses.
