D.O.P. (Protected Designation of Origin) Cheeses

These are historical cheeses whose production is regulated by the disciplines that each Consortium has established over time.

Selected from various local areas, these DOP cheeses find their ideal aging environment in Valcasotto, where they are able to design their physiognomy and enrich their personality. Scrutinised, caressed, and massaged, they are watched over daily until they reach their optimal maturation, which is always longer than the minimum aging limits set by the disciplines.
