The Washington Post dedicates a great article dedicated to the trip to Italy by the journalist David Steward White!
He also visited Valcasotto, where he was pleased to taste "a half-dozen deliciously rich cheeses served with sides of history and cheesemaking science".
After the tasting he walked "through the village’s cheese production rooms and dark, cavernous cheese nurseries. There each wheel of cheese is carefully tended by a small staff of affineurs (cheesologists) who assess, turn and test the product until it’s perfectly aged"
