Coconut Muffins with crispy Occelli® Butter covering
for 12 muffins
250 ml milk
50g coconut flour
60g Burro Occelli®
1 sachet of baking powder
pinch of salt
For the covering:
50g brown sugar
60g Occelli® Butter
half teaspoon cinnamon
half teaspoon dried coconut
Preheat your oven to 180°C and line a patty tin for muffins with 12 baking cups.
First prepare the covering: mix all the ingredients in a bowl and work with your fingers until a crumbly mixture is obtained; set aside.
Beat the eggs and sugar and add the Occelli® Butter. Gradually add the flour and the milk until a smooth mixture is obtained. Lastly add the sifted baking powder, beat for another minute.
Now pour the mixture into the baking cups without filling them to the brim and cover with a tablespoon of the mixture prepared beforehand pressing gently.
Bake for about 25 minutes in the oven without opening the oven door.
