Ingredients

For the base
250g crushed biscuits
150g Occelli® Butter

for the cheese
115g granulated sugar
3 tablespoons cornstarch
900g Robiola Mondovì Occelli®
2 large eggs
zest of 1 lemon

Method


Preheat the oven to 200°C, line a loaf tin with greaseproof paper. Melt the Burro Occelli® and add the crushed biscuits mixing well. Line the bottom of the loaf tin with this mixture, pressing well. With a whisk blend the cheese, sugar and flour together in a bowl until soft and fluffy, add the eggs and continue to beat; then add the lemon zest and, lastly, the cream and beat until puffy and fluffy. Pour the batter over the biscuit base and bake for 40/45 minutes until the top has browned. Leave to cool at room temperature and serve while still lukewarm.
