Ingredients

(4 portions):
Tomatoes gr. 400
Onion gr. 100
Cured pork cheek gr. 150
Extra Virgin Olive Oil gr. 40
Spicy chilli pepper gr. 2
n. 1 clove of garlic
Occelli ® in foglie di Castagno (in Chestnut leaves)
gr 120
Fine Salt as needed

Method


Gently fry the squashed garlic clove and the finely sliced onion in extra virgin olive oil.
Cut the cured pork cheek into strips and add it to the onion and garlic and cook for few seconds. Blanche the tomatoes, remove the skin, the seeds and slice. Add them together with the chopped spicy chilli pepper to the onion and garlic.
Cook for a few minutes, remove the garlic and season with salt.
Serve with bucatini or thick spaghetti and sprinkle with plenty of grated Occelli ® in foglie di Castagno (in Chestnut leaves)
