Pizza-flavoured savoury Muffins with Occelli® al Barolo
220 g flour 00
35 g tomato concentrate
40 g Occelli® al Barolo
oregano to taste
extra virgin olive oil
some folds of grilled peppers (without the skin)
baking powder for quiches
2 large eggs
10 g salt
Coarsely chop the cheese. Set aside. In a bowl beat the eggs with the salt, oregano, and the tomato concentrate. Add the sifted flour together with the baking powder. Blend the whole very well. Pour the oil and cheese into the mixture and continue stirring for a few seconds. Prepare some very small paper cups (the ones used for chocolates) and arrange them on a baking tray. Pour a good tablespoonful of the mixture into each paper cup.
Garnish the top with small pieces of grilled peppers (optional), some more oregano or olives. Bake the muffins for a very short time (about 5 minutes) at 180°C. Remove from the oven as soon as they are nice and puffy and when they are a golden-brown.
