Ingredients

to serve 2 people:
- 1 vanilla/apple persimmon (also known as diospero in Tuscany)
- 50 g cow’s milk cheese Verzin®  100% latte di vacca Occelli
- a small bunch of rocket
- a handful of walnuts
- 1 tablespoonful balsamic vinegar
- extra virgin olive oil
- salt
- pepper

Method


Wash, dry and peel the persimmon
Slice it quite thinly, eliminating the seeds
Arrange the slices of persimmon on a dish
Add also the washed and dried rocket
Take the Verzin®  100% latte di vacca
Cut a slice of this cheese and cut each slice into small pieces which are to be added to the persimmon and rocket
In a bowl put a little extra virgin olive oil (3/4 tablespoonfuls), add salt, pepper and balsamic vinegar
Blend the vinaigrette stirring with a fork
Season the carpaccio with the vinaigrette then add the walnuts
