Ingredients

To serve 4 people:

250 g peeled barley
2 garlic scapes (which can be replaced with 2 cloves of garlic)
Vegetable stock
20 g Occelli® Butter
200 g blueberries
extra virgin olive oil
2 or 3 thick slices of Losa® cheese

Method


First of all, prepare the vegetable stock. Clean the blueberries setting some aside for the garnish. Put them in a saucepan with 20g of Occelli® Butter and simmer for 10 minutes until reduced to a puree. Blend them with an immersion blender and strain the puree through a sieve. In a pan brown the garlic scapes cut into small pieces, then pour in the peeled barley and leave to toast for a few seconds. Add the stock a little at a time and cook over a low flame. When the barley is almost done, add the blueberry sauce and the diced Losa cheese. Stir well until cooked. Arrange the whole on a dish and garnish with the blueberries set aside beforehand.
