Ingredients

3 zucchini
250 g minced meat
1 large egg (or 2 small ones)
milk as needed
3 slices of white bread
100 g grated Valcasotto® cheese
salt and pepper to taste
1 clove of garlic
500 ml tomato paste
4 tablespoonfuls of extra virgin olive oil

Method



Prepare the sauce: crush the garlic and brown in a large pan with the olive oil. Add the tomato paste, the pinch of table salt and cook for 5 minutes. Switch off the heat. Now prepare the meat filling mixing a bowl of minced meat with the egg, Valcasotto® cheese, salt, pepper and the slices of bread soaked in milk then squeezed and crumbled. Cut each zucchini in half lengthwise. Remove the inner part with a corer (the inner part can be used to make risotto, vegetable soup, or an omelette), fill the zucchini with the meat filling. Place them in the frying pan with the sauce prepared beforehand, cover with a lid and cook for about half an hour, adding a little water if necessary.
