Chocolate cupcakes with buttercream icing and chopped hazelnuts

Ingredients

125 g soft Occelli® butter
125 g granulated sugar
2 large eggs
125 g flour
½ teaspoon vanilla extract or half a vanilla bean
1 teaspoon baking powder
2 tablespoons milk, 2 tablespoons cocoa
For the icing:
125 g Occelli® butter
125 g icing sugar
Chopped hazelnuts

Method


 

Heat the oven to 180°. Put the paper cups in the muffin moulds. Put all the ingredients in the food processor and blend for about 1 minute until a soft and smooth mixture is obtained. Fill the paper cups with a spoonful of the mixture and bake in the oven for 12-15 minutes. Keep a close eye on them. When the surface of the cupcakes has risen, remove from the oven and leave to cool before decorating. Prepare the icing with the Occelli®Butter and icing sugar then transfer to the piping bag and decorate the cupcakes. Top with chopped hazelnuts.
