Ingredients

2 large eggplants
Tuma dla Paja®
fresh basil
1 egg
3 tablespoons grated cheese
1 cup of breadcrumbs or dry bread
1 teaspoon dried oregano
1 tin chopped tomatoes
1 clove garlic
vegetable oil (for frying)
Extra virgin olive oil
Salt

Method


Dry the eggplants in the oven, whole, for about 30 minutes. Some ovens take a few minutes longer (you can do this even the day before and keep the pulp of the eggplants in the fridge). Once they have “deflated” and are soft to the touch, they are ready to be opened, the outer peel can be removed and so can any excess water.
In a pan, heat the clove of garlic with the extra virgin olive oil, add the chopped tomatoes, the oregano and a pinch of salt.
In a bowl, start to prepare the mix of chopped aubergine, chopped basil, egg, salt, grated cheese and breadcrumbs.The mixture should be soft and smooth.
Prepare the patties and insert a piece of Tuma dla Paja® in each. Roll them in breadcrumbs to coat then fry in vegetable oil until golden brown on all sides.
Now prepare the dish: on a bed of the garlic flavoured tomato sauce place three patties in the centre with a leaf of fresh basil.
