Beef rolls with Occelli al Barolo filling, caramelised onions of Tropea and Occelli Butter

Ingredients

4 servings:


4 slices Occelli® al Barolo
8 beef scallops
8 onions of Tropea
½ litre Barolo wine
4 tablespoons flour
Salt
60 g extra virgin olive oil
60 g Beppino Occelli® Butter
2 tablespoons sugar

Method


Cut the cheese slices in half and stuff the scallops. Close well and seal with toothpicks to avoid the cheese running out. Flour them and bring to brown in a pan with extra virgin olive oil and Occelli® Butter. In the meantime slice the onions and let simmer in a pan with Butter, oil and sugar. Blend with Barolo wine and simmer until the onions are caramelised. Serve the Occelli® al Barolo stuffed rolls and the caramelised onions.
